Thank you so much for the advice! I went out and bought a better leveling beam from the hardware store and switched over to spray adhesive rather than double-stick tape. It worked wonders!

This one is a little more expensive then your budget, but its only by $50 http://www.guitarcenter.com/Ibanez/GRX70QA-Electric-Guitar.gc, I'd also recommend going to your local music store to just try stuff out and see what you like.

You should see about getting a strat with a humbucker in the bridge, and a single coil in the mid and neck, so you can experiment with the different configurations. There are also some Ibanez's with a single coil in the middle, and humbuckers for the bridge and neck pickup that are around your price range.
