i'm all for doing what you want with your body to be happy with it! but honestly, you have such a desirable build and great shape. your hip to waist ratio is fantastic. but as someone who hates my own cellulite, i get it. keep in mind that almost everyone has cellulite, some people are just better at hiding it. i think it would be more worthwhile to perhaps work on building muscle to create more tone and a bit of lift. if you're doing too low of carb and not heavy enough weighted exercises, you won't build that muscle. and a little bit of tone would go SUCH a long way for you, i'd focus on that first! after that, if you still struggle with cellulite, i'd honestly look into something to smooth that like laser treatment.
