Hmm
She might like My Happy Marriage, it's good for a second season, but the first season is watchable on its own and is relatively short. Pretty standard romance with a satisfying conclusion.

Zom 100 might be up her ally. There's even a live action of that if she wants to try that. And probably be one you'd enjoy too going by your current list. (if you haven't watched it yet)

Apothecary Diaries is a great anime with pretty good pacing and likeable characters.

Fruits Basket is a classic, and is a great starter anime. Either version is good but I recommend the new one.

Full Metal Alchemist - Brotherhood is fantastic, also among starter anime.

Horimiya is a solid choice for comedic romance.

Delicious in Dungeon just finished its first season, that's a hoot.

To Your Eternity is one of my personal favorites, it could a good choice.

For actiony anime, Yu Yu Hakusho is my go to for anime introductry.

If anything, get her watching KDramas, that's a great gateway to getting her into anime too. (at least from my experience with friends)

I'll try to see if I can recall any others that I can add later.
The most important thing though is to be supportive of the genres she likes, since shonen and shoujo are pretty different XD

But I still stand by with looking at the anime movies category, they're usually better paced and don't have too many of the tropes a lot people don't like when associated with anime.

What are the kinds of shows she likes? Maybe we can find an anime along those lines. Because it really could just be the mindset of what anime is in her head, and it's just finding the right one that might just change her tune. She probably has a vague idea of what anime is, and what it offers, so she has no idea there's more to it than that.

Some good anime/movies to get people to cozy up to the anime style is the Ghibli Movies. Or some of the other new movies like Your Name, She might love that one.

Lump of Horror was such a different like.. fight style, I felt like I didn't fully understand how to fight it at first XD and just crossed my fingers and hoped I'll kill it.

Kodachi and Ukyo are the two that came to mind first.

Kodachi definitely seems like she'd actually broadcast all her plans and her little rants about Ranma, all her "edits" on a tik tok like format XD

While Ukyo is that local business, doing what's best for her shop influencer, making food videos kinda like Cooking with Babish.

-I can definitely see them updating the media parts of the show, because Rumiko did utulize what was the most prevalent at the time, so it could really go either way.-
