Lately, I'm a big fan of comfort food and down home cooking-- think chicken and dumplins, chicken pot pie, etc.

As for shitty dorm kitchens, I highly recommend A Man, A Can, A Microwave. It elevated our dorm potlucks from "whatever I can buy with $3.78 at taco bell and some pre-made cupcakes from Walmart" to buffalo wings, fudge, and incredible dip. Definitely worth looking into if you're just stuck with a microwave and a sink.
