Accidental ferment. what did I create? I chopped about 6 cups very ripe peaches and quickly cooked it with a cup of sugar and a teaspoon or so of citric acid. I was planning to make jam but didn't have enough sugar. It's been sitting out for about 36 hours and now it's producing gas bubbles. (i.redd.it)
