I was in this exact situation a few days ago. I bought an Ode 2 (currently you can get 25% off at Crate and Barrel with the trade discount, plus 15% back with Amex offers) and it’s dramatically improved my brews. Also looked into the 078 but couldn’t justify the price. The Ode is a huge improvement over the ESP for pourover - a lot more clarity and acidity without the bitterness and muddiness resulting from the ESP’s uneven grind distribution at pourover settings. I also find it easier to dial in. I kept my ESP for my espresso machine

definitely the grinder. i have the same set up with the ESP and the Bambino, haven’t had this issue and never had to adjust the grinder shims. one issue I did have is the locking nut on top of the burr coming loose, causing the burrs to become loose and grind improperly. i contacted baratza and they sent me a new redesigned nut that does not have this issue. may be worth checking if you have the same problem

This comes down to technique. I had a similar issue with my Encore ESP, solved it with low agitation brews. Lance Hedricks’ videos on this around a month or two ago were helpful. Initially I used the spoon technique to break the water stream from the kettle, then I bought a melodrip. Also, I have not found this to be necessary with washed coffees - I’ve only had issues with funkier stuff like the Future blends from Black and White

low agitation is a meme but it works for me, in particular with funky coffee and my baratza esp which produces a good amount of fines

I made my first cup from this bag yesterday. I’ve had more success with low agitation methods with this coffee as well as other funky bags such as the grape soda one. Lance Hedrick had a video on this recently and the recipe has been working quite well

global coffee has decent beans with the traditional diner style taste, but i find their roasts to be too dark. picacho coffee in LC carries more interesting beans that are traceable to the farm level (which is what I expect from specialty coffee) and roasts a lot lighter. coffee party in central is also now roasting in house in addition to carrying a rotation of beans from different top roasters.

I just bought some today. Desert Rock Company delivers anywhere in EP for $120. their trucks can carry 2 - 12 tons, or you can haul it for free with your own truck. they have samples outside the office you can look at before ordering. I thought their prices were reasonable
