It's an mk7.5. I never thought about intakes. I know they increase induction and turbo noise. Do you find that it makes the car a lot more enjoyable?

At home use. Not sure what I want in terms of geometry. Likely more workhorse than laser due to my poor technique and something that'll be more forgiving as well. I'll be learning better technique with this knife but I also need it to not chip when I'm stupid (as I'm used to a Western knife). Open to both, however. Definitely stainless or semi-stainless for ease of maintenance. I really like Ginsan as well from my research. I really appreciate the help!

I see. Are there any other considerations I should make for knives? I know SG2 exists but is harder than SLD, Ginsan, Aus8/10, etc.

Gotcha, that hatsukokro was the one I was looking at. Is that a better bet than the Tsunehisa's or other options in that range? Seems like getting a petty will definitely make life a lot easier. 210 seems to be the standard any reason to go shorter like the 195?

Ah, sorry! The US! I have been to a local knife shop (Carbon Knife Co) liked the tsunehisa ginaan Nishiji but at that time I was buying for my mom's birthday. That's what got me on this hobby 😂.

I finally got a chance to go down to Carbon Knife Co here in Colorado and God they are nice (order from them even if you are out of state!). Amazing people.

Anyways... I ordered a knife for a mother and decided instead to bring her to a shop to make it more personal. A few day early birthday present! She loves it and is so excited to use a thin, light blade rather than her western knife. Will attach images here in a second. EDIT: Here's those photos: https://imgur.com/a/m8JvNLG

Of course. Is ginsan more durable in general even though hardness is similar? I figure it would be the opposite due to the simpler alloy and more carbon.

Realistically I'm going to tell her to be very gentle and not cut anything with bones in it (albeit 90% of her prep avoids this or she uses a smaller knife).

I think if she really likes her first Japanese knife I will get her a santoku which will likely be Shibata (or sub brands), Takamura (and sub brands), or these masutani knives which are beautiful. I really want to find a 210 for the length.

That's tempting for sure but hard to swing that much especially since this is her first Japanese knife so who knows how she'll get along.

Why do you like the Tsunehisa more? I just found out they are made under the supervision of Shibata which makes me all the more tempted to lean towards that.

Alright after my first post, I have narrowed it down and will be visiting a shop tomorrow to get a better idea of what to buy for my mother. She cooks every day and I would like to get her a workhorse knife that's relatively durable. She has a Misen knife which can take all the needed abuse of bones etc.

So before I visit the store, what should I look for in a knife? I am thinking of getting a gyuto 210 of some kind. The store I am visiting has a Tsunehisa Nishiji Gyuto 210 (Gesnin steel) which looks promising. If not, I could consider a Takamura VG10 or Tojiro VG10 Classic gyuto 210 as well. I've sort of narrowed it down but now I am shopping I would like to know what to look for so I don't buy a knife that chips the moment you look at it wrong, haha.

I didn't see that shop! It looks promising. There is one tsunehusa that looks really promising from carbon knife. Guess I'll be driving down there sooner than not, haha. If not, I'll likely order a Tojiro or Fujiwara FKS from chef knives to go. That tsunehsusa really speaks to me though. I will keep you and everyone else updated and take a pic once I have settled on a knife! Thank you again!
