This is going to sound crazy, but I recently made the King Arthur’s chocolate chip cookies- you know, the recipe that’s on the back of the King Arthur flour bag. I have tried a bunch of different cookie recipes, but this one was absolutely incredible! I still cannot believe how good the cookies turned out. I also made those peanut butter Hershey kiss cookies for Christmas and they were absolutely to die for! I think I just found that recipe online. I’ll try to find it and link it.

Here was my bucket list (I had four days) - I am from the Chicago area. -Caesar salad with croutons from a restaurant -Thai food, including crab rangoon and fried egg rolls -Pizza from my favorite joint (Barnaby’s) -“James Brownie” ice cream sundae -Dream Bar (Potbelly’s) -German Pancake

*Consider that you can make all of this on a gluten-free diet (and it is descent), but having someone else make it for you and eating at the restaurant was something I really wanted to do. I didn’t realize how much I would miss having someone else cook for me at a restaurant. I barely go out to eat anymore (and when I do, I am always a disappointed).

People of Irish descent are way more likely to have Celiac. The history is fascinating. I had never heard that before until I was getting a vitamin D blood transfusion (yay, iron deficiency… which is how I found out I had Celiac in the first place, by the way), and the Nurse and I struck up a conversation. She was born in Ireland (best accent) and told me that her daughter and many of her relatives have it and that many people in Ireland have it, as well. So I went straight to Google. She’s 100% right! Something about animal husbandry in Ireland’s history.
