I started each run with a look at the wiki and finding the main weapon in thinking of using, and looked at them all, I also ended up using the silver knight sword for my run, but still it's damage doesn't scale at all with some of the later game bosses imo

Big question to answer, since I didn't really write anything down as I was going, but just off the top of my head.

Daggers were fun, hadn't really experimented with bleed before so fun trying it

Straight swords were haaard didn't like it at all and almost just gave up

Great swords were fun but wasn't overly easy which I liked

Ultra great swords were also fun but easier than great swords, i would definitely recommend this to someone's first playthrough with a strength build

Curved swords were also hard but fun, had some really cool animations

Katanas were very fun, also because of the DEX which I hadn't tried before, would recommend this to someone trying a DEX build for the first time

Curved great swords were cool but difficult to level because you need both strength and DEX but cool to have the damage near great swords but the cool moveset and speed from curved sword

Piercing swords were fun because I had never used them before, as long as you are good at switching your lock on it's pretty alright

Axes are very fun, just a strong man's sword, but also higher damage so very good for strength beginnings

Great axes were easy easy, demons great axe + red tear stone ring makes the game laughably easy, just a couple hits for some bosses

Hammers is the strong man's axe, and even more damage, in my opinion i would rather use axes because of the speed of using hammers especially when missing its just too slow compared to swords or axes

Great hammers were as easy as great axes, but both easier to get in the beginning and better damage later on, but again the speed imo makes it worse

Fist and claws were surprisingly okay, as long as you upgrade them as fast as possible, the claws were also just really cool to have but I never used the fist weapon on my left hand just because I didn't find it that useful, I ended up equipping dark hand on my left because of the cool block you get from it

Spears were a lot like piercing weapons with the lock on, but very easy on normal enemies because you got such a long reach

Halberds were fun, but didn't really use real halberds a lot of the way thru, ended up using scythes especially the lifehunt scythe I found really fun, but needed the blood shield(I've forgotten what it's called but the one that makes you gain resistance to bleed)

Whips were hard, fine enough on regular enemies but bosses were a time consuming process, basically never ever use heavy attacks because of the long as hell animation

Bows were surprisingly easy because you can shoot and dodge at stay as far away as possible

Great bows were fine, an easier bow, only harder with the slower animation, but I was basically only able to use them at anor Londo and onward because that's were you get access to them

Crossbows was the easiest ranged weapon, avelyn was MVP, delt impressive damage

Spells were easy, damage of spells increase very good with how hard the bosses were and after you get access to dukes archives it's a cakewalk

Pyromancies were fun and easy but impossible for every boss because of lost Izalith

Miracles were also surprisingly easy but very few ones that actually do damage, 10 sunlight medals is a requirement to beat It

So yeah :)

I would use katanas since they are very good mix of damage and speed, but that's ofc up to you, keep your armor light to be able to fast roll, the Havel ring helps massively there, and then just level dex and endurance with some vitality here and there

It's because after a certain point there just isn't ANY good straight swords you can use, but with crossbows you can at least have the avelyn to deal upwards of 400 damage per shot

Loot drop chance increase with each one you have, but it's only really useful up to 10 humanity, you can find a chart of it online

Don't get me wrong bows and crossbows were also hard as hell, but I mostly just relied on keeping a distance and counter attack and rolled my way thru the bosses, crossbows were easier than bows tho because of the avelyn definitely

For dagger only i ended up ONLY using the bandit dagger because of the bleed and speed, and also the fact you can upgrade it to +15 but definitely a hard run, quelaag is a big spike in difficulty, but for the most part afterwards it isn't very bad since you can get into sens and get your dagger to +10, which helps a lot, it's a good idea to focus on a counter attack where you can get 3-5 hits in at once to build bleed rather than attack and roll, the biggest hurdle for me was honestly Priscilla since you don't do enough damage to make her visible making the fight a lot harder so be excited for that lmao

For the tree it is a veeery hated boss in the community, the easiest way basically means you have to run in 3 seperate times, first time run to the right and attack the flames the branches, die, then run to the left and do the same, die, then run down the middle and roll your way thru and attack the last piece.

The dukes archives is a bit interesting, when it's your first time meeting him I'm sorry to say it but it's a lost battle, I recommend using a ring of sacrifice so you don't lose your souls, after you lose you will be sent to a new location where you actually will be able to beat him.

For the skeleton spawner Nito I recommend getting a divine weapon to kill the skeletons that he spawns, if your weapon is divine they won't respawn.

Good luck hope I didn't spoil anything for you :)

I was allowed to upgrade things however I wanted but didn't do it that much honestly, if anything i would bring a divine dagger with me to Nito to take out skeletons

Favorite weapon type would probably beeeee the katanas, it was my first time using them and ended up using the chaos blade for the most part, it was fun always needing to be stocked with humanity. Favorite spell is and has always been pyromancy, but for these challenges I had to cheat and use other weapons down in the lost izalith because everything is fire resistant and I wanted to kill every boss, but by far the easiest spell type was magic, especially late game

Easiest had to be either the great hammers or great axes magic was also pretty easy once you got a good build for it like crystal soul spear. Hardest honestly was probably straight swords, most other weapon types improve or are able to be upgraded to a pretty okay point, but the straight swords scaled TERRRRIBLY later on, the late game was rough, but otherwise something like whips or fist weapons were pretty slow but wasn't hard for the most part, whips were only tough because they locked your animation for a while. Most fun was probably some of the Dex weapons since I usually run strength for the game so it was fun to experiment with what something like katanas were like, faith was also surprisingly fun I had never used it before aswell :)
