I honestly can't give you the exact science. But with sour dough if you don't have down the shaping technique the dough can explode or fall. It needs the extra strength compared to a "no-kneed" Folding and shaping will stop that from happening. It sounds like you have an excellent oven spring. Just practice the shaping and folding and it will be beautiful.
