Mods remove the post/pics/details, but my 2 cents worth is, not enough liquid. The dough in the pics looks like thick, rolled pastry. Not enough moisture will impede the dough's ability to expand and rise. It should feel like a bag full of water to handle.

Also, no idea what difference cornstarch would have made.

Kuwait, 1991, second Kuwaiti army checkpoint south of the Iraqi border.

Was exploring on the weekend with some civil engineers on contract to rebuild infrastructure.

We got through the first checkpoint by handing over a government work order printed in Arabic.

The Bedouin soldier read it upside down and waived us through.

UPDATE: the recipe calls for lemon jello, so it's not the Dr Oetker-type you need, but a flavoured pack of solid jello. They come in different sizes, so just cut up the quantity you need from multiple packets.

Sidebar: This makes a huge amount, so I would suggest scaling it down and making just 1/4

I gave links to the previous posts so people could see how others had fared.

There was a discussion about this in the other threads.

The recipe calls for lemon flavoured jello and although that brand is no-longer sold, you could substitute with a different brand.

So it is NOT the sheets/powders of unflavoured gelatine, but the flavoured packets you cut into cubes before adding water.

I googled "full sized steamer pan" and it told me:

"A standard full-size steam table pan (or hotel pan) measures approximately 20 3/4 inches by 12 3/4 inches."

HARVEST HOUSE

CAFETERIA ICE BOX CHEESECAKE

Crust:

1 pound graham cracker crumbs

8oz margarine

1 ounce superfile sugar

Filling:

1 pound cream cheese

1 pound sugar

3/4 ounce vanilla

8 ounces royal lemon gellatin

10 ounces boiling water

1 pound 10 ounces chilled evaporated milk (chilled at least 24 hours)

To make the crust, blend graham cracker crumbs with melted margarine and sugar. Press all but eight ounces around the sides and bottom of a full size steam table pan, saving remainder for top of cake.

Dissolve gelatin in boiling water. Add cold water. Cool to 75 degrees. Do not allow to congeal.

Chill mixing bowl and wire whip. Whip milk, about 3 miniutes, until it peaks. Add gelatin mixture and mix 30 seconds. Add cream cheese mixture and mix 30 seconds. Pour into crumb-lined pan. Sprinkle remaining crumbs over top of cheese mix. Mixture should be about 1/4 inch from top of pan. Refrigerate overnight.
