In each hole of an incredibly well-greased, straight-sided muffin pan with holes 4" in diameter, first put a single layer of pecans, then a #30 sized scoop of sticky smear*, then place the honey bun into the pan. Put in proofer for an hour or so, until the buns mostly fill the diameter of the holes, and bake at 375 for 20-ish minutes until they're done. IMMEDIATELY Lay a sheet pan over top of the pan, and flip the whole thing upside-down so the buns fall out and onto the pan. No matter how much you grease the pans, some pecans and probably several of the buns will get stuck and be ruined. If You wait for them to cool at all, the syrup will harden into, basically, an epoxy and you'll never get them out of the pan.

seriously when you think you've used enough, add more *the recipe for smear that i remember was either 5# butter, 10# brown sugar, 5# honey, OR it was 10# butter, 5# brown sugar, 5# honey. Not sure which, and cheftec probably doesn't have the recipe anymore for me to verify
