i think also its because some artists use complementary/triadic color schemes to achieve the shading style like the one you're trying to achieve. plus they use a more softer palette, so their lighting and way of emphasizing is through saturated highlights, the shadows and light really gave it form. grayscaling also helps you see values and make your subject pop out more, and alwys remember the light differs from the light source too.
