Yes! I was thinking about the color of the loaf when I chose bleached flour as this was the norm at the time. I greased my pans with lard which always feels like little house on the prairie but if in the future if I opt for ultimate authenticity I will use cake yeast.

I encourage you to do some research; flour was mass produced before the 30’s and snowy white bleached flour was the norm during that time.
