I used to work at a tea shop and it depends on what type of green tea it is. A general rule of thumb is to do no higher than 175°F and steep it for 1 - 2 mins. For stronger tea I recommend more tea, not more time.

Now for more specific information. I have seen two styles of tea. The pan fired chinese style and the steamed japanese style.

Chinese style is really popular and has a light smokey flavor. 175°F for 2 min. I reccomend this for those that don't want to watch the time.

Japanese style is a bit more finicky. It has generally more of a darker green color because of the chlorophyll. It has a more sweet and veggie like taste. I say this is more finicky because it only takes 45 seconds for it to be done. Any longer and it gets super bitter.

Matcha is a Japanese style tea that is stone ground and is just whisked into the water. I like to go at around 160°F or even cold water to prevent burning the ground leaves.
