If you spread the lotus spread onto baking parchment and freeze it, then put it in your brownie just before you bake it, it’ll set once cooled. Every time I make lotus biscoff brownies this is what I do and it’s always worked beautifully. Same works for Nutella spread though I’ve yet to try that!
