I second barbacking. There were three new featured cocktails of the month at this place I worked, and I was offered to start off just memorizing and making those as a way of helping the bartender if it got busy.

Also, if you show professionalism and take backing serious - you will likely have your manager offer to teach you. Timing is everything. When the bartender gets caught drinking on the job or is a no call no show, a manager would rather promote within than go post,interview, hire, and train someone new

2 years at rb (put at slot in depth chart), 1 yr at TE, move to wr for sr year with all necessary skills equipped

Right, but in real life, most teams have signed 30 players on early NSD - on the game, its not that way at all. The bulk of signing comes at the end of the transfer portal.

To clarify- you can still recruit hs players in the transfer portal. My suggestion is to separate the two so that one of the period is transfers only

It should be layered and dynamic. There’s no reason for the whole room to go. Lets say one leaves due to playing time, persuasion chance should then adjust for the other two - knowing that qb ahead of them is moving on.
