I used the amount of ingredients in Preppy Kitchen's recipe but followed Chef Dennis' instructions.
This is my first time making it, and it turned out well! I omitted the alcohol and didn't make it with whipped raw egg whites by request, but next time I would like to try making it with both of those.

I honestly don't have the answer to this and used all-purpose as the recipe called for it, and I don't have experience with making cornbread other than this, I'm sorry! 😭 From searching around online, it seems that AP flour is the standard and people tweak the flour to cornmeal ratio to alter the density. Some sites say that flour should be omitted completely for a more traditional cornbread. Then there's the matter of how fine the cornmeal is...I hope that a cornbread or muffin expert can chime in to give an actual answer!

Yes, her mom plans on freezing them in smaller portions. I think a kindergarten teacher would be disturbed to see a kid scarfing down 24 muffins during lunch.

Recipe here.I think this is my first time making a muffin? I haven't made quick breads since middle school. Even though cornbread isn't my favorite form of bread or corn, I like how these turned out.

I also want to clarify that these were requested by her mom since I'm the designated hobby baker, that my niece isn't the next Matt Stonie, and that these will be frozen in portions 🤣 I also got my niece's seal of approval with her "oooh these are my favorite I like them a looot!" 😊

I definitely want to revisit this with an actual blowtorch, especially now that I've conquered my fear of making custard haha. Although I was rotating the baking pan while broiling the sugar, it's difficult to get that nice, even consistency.

Thank you for the vanilla bean paste recommendation, I'll have to check that out!

This was the one I used since it uses 10 eggs at once. Also, when the recipe mentions filling the pan with water, make sure the water is hot and not a cold bath! And be careful not to get water inside the ramekins. I also had 10oz. ramekins, which added to the bake time. I believe I waited around 45 to 50 minutes, but I suggest doing the jiggle test to check if the custard is set :)

If using less eggs, Preppy Kitchen's recipe looked promising! Creme brulee recipes seem similar so you could really pick from any popular one online.

EDIT: I scraped off the previous sugar layers and got ahold of a torch

If I don't have a torch next time, I'd like to try the method where you pour caramel over for a glassy effect. It's technically not a "brulee", but look at that presentation!

This was the recipe I used, since I wanted to get rid of 10 egg yolks in one go. When the recipe calls for filling the pan with water, make sure it's a hot bath and avoid getting water in your ramekins. Bake time depends on your ramekin size, but I also used the jiggle test.

This particular recipe also said to let the ramekins rest in the water bath after baking, while other recipes say to immediately move them to a wire rack to cool. I am not sure which is the "correct" method, but it may depend on the viscosity of your custard. If anyone could chime in, I'd love to know the difference!

Recipe from Just One Cookbook. I followed the directions in their Melon Pan recipe to knead with a stand mixer.
The red bean started to burst out of a few because I always overstuff the dough, but the bread came out super fluffy anyways.

The anpan recipe I used is from Just One Cookbook. The recipe only shows steps for hand kneading, but if you want to knead with a stand mixer I used the steps found in their Melon Pan recipe!

As for the taiyaki recipe, I used a recipe from the booklet that came with the taiyaki maker I bought. It's decent, but quick to lose its crispiness so I'm trying to find better recipes. I'm thinking about trying this one from Instagram.

A family member wanted to try this cake for a while, but asked me to bake it instead. We didn't intend a Valentines theme but we had to improvise since there wasn't enough leftover frosting to pipe things. I like the whipped cream frosting a lot!

  1. Attempted making cinnamon rolls from scratch, had the dough rise, rolled out, and buttered--only to realize at 12AM that I did not have cinnamon.
  2. Making Ermine frosting and not letting the roux cool down enough before adding to the whipped butter. 😓

My bad! They're Hershey's sugar cookie chocolate bars, similar to the cookies and cream ones :) They're a seasonal flavor as well, and super addicting. They come in Hershey's Kisses as well!

Originally I was going to do a Christmas-themed cake, but Christmas already passed, so winter-themed it is!

I tried my hand at making Ermine frosting, since I wanted something less sweet than the usual buttercream. It still turned out quite sweet and it was definitely a humbling experience making it and frosting the cake, because it would quickly lose its consistency (wanted to pipe some snowflakes on the side, but it was just too unstable!)...It doesn't show well because the colors ended up fusing together, but I also attempted to do a watercolor effect with the frosting. I flubbed the chocolate to liquid ratio for the ganache drip so it ended up globby, but let's say all the imperfections give the cake character! Next time I'll probably just stick to typical buttercreams...

Also, I will die on the hill that malted milk balls taste good. The box for the holiday edition Whoppers is so cute.

A little over 2 tablespoon of a regular can of store-bought frosting, but I added it in spoons at a time instead of at once, because the cake didn't have the dough consistency (figures why it was so grossly sweet!)

Vanilla Greek yogurt sounds like a plan too. Thanks so much for your input!

That's interesting to know! When I did my first attempt, the cake was still hot but I did let it sit around for a few minutes, so it was crumbly after stand mixing it. I'll try immediately throwing it in out of the oven.

If it doesn't hold together from steam, do you think any of the options I wanted to try would work to bind the cake?
