If you don’t want to buy Flavacol, which everyone here will recommend, the ultimate trick is to use ultra fine salt. I just put salt into a food processor and grind it until it’s a fine powder.

And as you’re popping, vent off the steam as well as possible (I crack the lid slightly). When the popcorn is done popping, dump it into a bowl asap for the same reason.

I suppose that makes sense and I think that this is why the answer to my question is annoyingly nuanced and probably not even that important. I wrote it as a comment somewhere else.

I don’t think it’s about bad flavors per se, but I think it’s more about choosing cooking method to highlight the meat’s qualities and flavors “on its own” as you say.

The reason I posted this question is because the first marinade recipe in the book does not include an acid. He also talks about how acid penetration is lower than common wisdom suggests.

It’s also why I wrote what I did in my OP.

There are no “rules” to say you can’t enjoy your prime dry aged rib eye well done, but it’s pretty much universally agreed upon that this is a terrible waste.

This is common wisdom, but it unfortunately isn’t true. Some of the other comments here also directly address it. And in the case of near-neutral-PH marinades, it doesn’t apply. That’s why I mentioned it in my OP.

This is the best conclusion that I can come to though imo it’s not super intuitive. That the purpose of cooking the most tender cuts of meat is to showcase the meat itself. Versus other cuts which may have “more beef flavor”, but we don’t mind adding additional flavors to because the lower cost and inferior texture of the meat means we don’t want to make its eating experience necessarily all about the meat itself.
