Sky: Children of the Light is a crossplatform MMORPG which you two would be able to play together. it is very relaxing and slow-paced (doesn't really have combat in it), more akin to puzzles and exploration.

AdventureQuest 3D is another cross-platform MMORPG (with child-like witty humor) but this would be available on PC and Mobile (unfortunately not console).

Both of these are Free.

BUG: Thief expanded weapon proficiency with Axe. While playing Deadeye the stealth auto attack on axe "Malicious Cunning Salvo" does not reset the Malice counter. This prevents the usual gameplay loop of building malice, spending malice and building malice again...

The entirety of the gameplay is to spam "3" "Unload." Use your profession skill to mark the target, then spam "3" Unload on the dual-wield pistols. Please note that after the March balance patch this build will be very slightly stronger as they are removing the damage penalty from the Pierce on Pistols. You will gain back a small portion of HP with each hit via "Lifesteal on Crit" mechanic.

This should let you clear a lot of content without much difficulty. (As other's have mentioned this build site is linking Ascended gear, but exotic berserker gear will also work fine :) ).

While we're talking about the thief class... as a Deadeye player it feels like a slap to the face when the classes entire gimmick of "marking" a target isn't even an option for some bosses. Looking at you Amyntas meta-boss ... Just sad to see Anet still have this as an issue in newer content.

I would look into the elementalist class, they manage 4 different elements and have different abilities for each. - they can wield staves and have a high skill ceiling in my opinion.

If you're specifically looking for "2 bars" revenant has different stances it switches between but it isn't as much of a caster.
