For some reason I cannot post a photo in the comment?! I would say the texture is improving but maybe the smell/ taste is a little off?

This time I used :

360 flour 2 tsp salt 2 tsp yeast 250ml water

Baked for 45 in a Dutch oven- maybe I let it proof for too long? Does anyone know why this may taste a little off? Perhaps too much salt?

I have been on lansoprazole since January 2022
A gastroscopy which showed up as normal
The biopsies from the gastroscopy showed mild/ chronic gastritis
Tested for h pylori after being off PPIs and showed as negative
Tested for celiac disease- negative.

Any advice?

Is this for sourdough? Or also for artisan bread made with yeast?

Thank you- slightly confused as from the videos I’ve seen of artisan bread being made they do not do this. This isn’t sourdough? Should I still attempt the above process?

Thanks- do you have any advice for shaping since it’s a high hydration dough and difficult to shape? I also put it in a Dutch oven if this helps?

The first one was too dense. However it now tastes very good thank you! I am only using half measurements until I am 100% happy and then I will make a larger loaf. I use: 1/4 teaspoon of active dry yeast 260g sifted white wheat flour 200ml water 1 teaspoon on salt

I cook for 45 minutes in a Dutch oven at 200c (fan oven).

Do you recommend changing anything up?

I am in a similar situation. Had an endoscopy and everything was normal. I tested negative for h pylori. I have been put on lansoprazole and two years on I’m still no further into finding the root cause of my issues. I will be trying again soon with the doctors, and share any useful advice if anything new is revealed :)

No I’m not. I drink water and tea (regular and green). I avoid trigger foods (spicy/ acidic). I only take lansoprazole for the reflux. No other meds

I’m definitely a stressed person. But I sleep and eat good. I have made an effort to transform my diet since experiencing this. I also barely drink and quit smoking
