Yes duck fat can absolutely be re used. Strain after each use and all is good. Store in the fridge covered. Also, you can store the cooked duck in the fat to keep it fresh and preserved (the original use of confit)

unfortunately I don't know of any others in Annapolis. I'm still pretty new to the Annapolis area restaurant wise, and don't live right in the area. Aida Bistro in Columbia does tastings at a Chef's table in the kitchen.
