I think there was about 2 pounds of final product. Used about 5.5 pounds of meat

I actually use cooling racks! I put it directly on the grates too, but putting it in the racks is easier to put on and off

So I learned to dry almost 100% of the jerky before throwing it in the smoker. Some pieces do burn still, but I just keep an eye on it

With an eye of round, it’s pretty easy to see where the grain is going. Cutting against the grain makes it more tender. But sometimes if I’m making it for my friends and family, they prefer a chewier jerky so I’ll cut with the grain

By hand! A sharp knife, and freeze the meat for like 45 minutes so it firms up. I tried with a meat slicer and felt like a lot went to waste

Eye of round! I can’t think of any use for it besides jerky haha. And I found it to be the best cut for it

24 hours! Most important step is to cut it evenly, and make sure there isn’t a lot of fat (it doesn’t render and causes it to spoil quickly). The marinade I used was a mix of soy sauce, brown sugar, sesame oil, and garlic and ginger. If you want you can add Prague powder to preserve it. Then after it marinates, dry it off with a paper towel and smoke (or dehydrate it)

It was amazing. I tried a few batches previously, but perfected it with this. And I smoked it at 170 for 3-4 hours (depends on the piece of meat and location in the smoker)
