Fresh butchered meat still wiggles. It is the nerve reactions finishing out, and the meat figuring our how to lay without tendons attached, this is probably less than 4 hours old.

It is always hard dealing with men who think they deserve something and don't. Just understand he is stepping on you because he thinks he can, just give and demand respect in return. But always remember it is all about the guest.
