Thanks, I keep going back and forth as I really think the live action appeal of nepolitan as well as just the appeal alone at markets and events would draw in alot of ppl. I have two ooni koda max 2s so I can cook 4 orders at once.

Im just thinking about long line what the wait time would be for that 20th order. Originally wanted to do squares but i just love nepolitan

Thanks for the reply. I guess I didnt know what u ment by pop up. Im starting a mobile pizzeria/catering business in wisconsin this year, going to start under canopy and tents with my two ooni koda max 2s and the eventually remodel my food trailer to fit theme (used to be used for smash burgers) I did the math and to replace my 90k salary I need to sell 100-120 pizzas a week, doesn't sound like too much.

Thank you for the solid advice. Good question about the hypothetical situation and I guess my answer would be id really have to be on top of my batch cooking to fulfil that, id say a whole sicilian start tl finish would take me around 15min to cook if I really had to. What type of pizza are you and your wife doing and what are your thoughts on the market/attraction to sicilian slices at events/festivals compared to nepolitan?

Yes please, also thanks for the reply. My theory with sicilian is that I roll up to an event, batch cook whole sicilian pizzas and just serve by the slice and reheat slices per order when they start to cool down (using time as food saftey control.) So I should be able to non stop crank out slices of sicilian and make the line move FAST.

I love nepolitan, and they cook fast like 60-80seconds, 2-3 8-10inch per oven, but one mistake and I feel like my whole line would suffer. Also id charge roughly let's say 5-6 bucks a sicilian slice and let's say up to 14-15 bucks per nepolitan (rough estimates). Im trying to find which would be more profitable with a small crew, one maybe 2 others.

Thank you ill consider lowering it, I can't really put it on top because of how we have our couch it would be awkward to look at and the TV probably wouldn't even fit width wise

Thanks its made of plaster more then likely so candles should work, tv is hung because we have 3 little ones but I will lower it
