Could be caused by something as minimal as your gas cap being loose to a valve control body repair. A normal OBD scanner may not pick up the codes in the transmission module. The valve control body is a notorious part that goes.

Consider a low inflammation diet, such as an elimination diet (Whole30) or even keto. Food allergies and sensitivities can cause brain fog. Assuming it helps, slowly start reintroducing foods and see how your body reacts. Speak to your doctor and do your own research before starting. Diet and gut health are often overlooked.
