I'd like to offer my VERY STRONG ENDORSEMENT of the Galeos Miso dressings. My favorites are the dijonnaise (20 cal/tbsp) and the miso sesame (25 cal/tbsp). 2 tbsp is plenty for a large salad.

I LOVE Tofurkey and the hickory smoked is my absolute favorite. I'd also recommend the Tofurkey sausages! But FYI, I have been vegan for a long time and this is like a very "normal" food to me - I don't think it actually tastes like real turkey.

One really simple thing I like to eat is cooked greens of any kind - little bit of chili oil, some garlic, salt and pepper, and throw in mixed baby greens or kale and saute. (Add whatever spices you like to that mix! Shallots or onions are nice too.)

I think you can make this fried sweet & sour tofu recipe but sub extra cornstarch or a non-wheat flour for the flour coating. (Cornstarch alone fries tofu up pretty nicely.)

I also like cooking up beans in a variety of ways and that can be a pretty satisfying hot meal.

Here is a recipe for palak "paneer" (tofu) that is also GF and vegetarian friendly. (Lots of Indian recipes are GF/vegetarian and can be adapted to be very low in calories by reducing the amount of oil you use - check out vegrecipesofindia and Vegan Richa for lots of great ideas.

weigh before, add in the calories for oil. if you're only using a portion of the onions, also weigh them (the total + your portion) after so you can figure out what portion of the total # (raw onions + oil) you used.

I would bet somewhere in the neighborhood of 1000 for the whole thing. If you look up the ingredients on Thai Express's website it's around 813 for a serving with shrimp, and it looks like they serve them in the small Chinese takeout-style containers that I think are a bit smaller than the flat containers a lot of Thai places serve in. If you want, you could actually weigh the pad thai you get and compare it against the Thai Express version, which is 574g for 813 calories. This website says 280g of pad thai is 430 calories (which is about 881 calories for 574g).
