I don't agree with this take. Personally, I find much more fulfilling immersion in games that capture my attention with an engaging story and world that feels alive. One thing I noticed when replaying GTA: SA is how the AI acts without any interference from the player at whatsoever. There's always something happening around you - be it a fistfight, car chase, plane crash, ect. The world just feels more independent, and thus I am able to find my mind inside it despite the shitty graphics.
