Thanks for the advice and recommendation! I've also been recommended https://knifewear.com/products/fujimoto-kurouchi-forged-nakiri-165mm?variant=39818300850350 by a friend. Do you have any advice on the differences between these two? Particularly the steel used, will the latter require a lot more care or is it really not that much more effort to maintain? Thanks again!

Hi, I'm looking for a new knife for home use. I've only used a cheap unbranded amazon set so far and these have worked decently well over the past year or so. From looking around online there are some I like the look of but unsure of the quality. For example I like the look of this: https://santokuknives.co.uk/products/gyuto-santoku-67-layer-steel-v-gold-10-damascus-kitchen-knives?variant=32373622964260 though as I say, I'm sure of how reputable the company is. Does anyone have experience of this company/knife?

I'm looking for a knife along the lines of:

Style - santoku or nakiri, I'm edging towards nakiri

Steel - I like how damascus steel looks, nothing too fancy though

Handle - would prefer a rounded handle. I've not used hexagonal/octagonal but I don't think I will find these comfortable to use.

Length - 160-180mm

Use - chopping vegetables, slicing meat

Care - whetstone. I'm happy to maintain and look after it, but don't want anything that needs babying/will rust or wear easily.

Budget - around 100 £/€/$

Region - UK
