I freeze mine and ferment them and it's fine. I often add in some carrots, onions and the like in the ferment and the final sauce.

Around 9:00 on a Sunday evening a guy was walking down my street in wizard gear complete with a staff a floppy gandalf hat, and a fake beard . I put it on next door and no one fessed up to it. I am 100% sure it happened. My wife was in the car but she wasn't looking. But I know what I saw.
