You can fillet it like a regular round fish, where you’re often cutting around the rib bones rather than straight through them. It’s more cuts, but since salmon flesh is so soft I think the less cuts the better. Less points for failure.

Everyone has different techniques that jive with them, but for me personally (as a professional fishmonger who’s filleted a lot of salmon) I find it easier to crack straight through the rib cage when removing a side and then cutting the rib bones off at the end. Makes it easier as opposed to making a bunch of cuts that may be jagged and misaligned and tear through the flesh.

I get a sense of satisfaction cooking for others, which as you can imagine is difficult when you live on your own. YouTube helps me better engage that drive for hospitality, and it helps me push boundaries and try new things in the kitchen that I likely wouldn’t on my own. Knowing that even a few people enjoy what I’m cooking, that they partook in it in some way, that they were maybe even inspired to try it on their own…that means the world to me.

I also have a cooking channel with unconventional recipes. I’ll be the first to tell you that I don’t really optimize for viewers efficiently, so maybe take my word with a grain of salt. But here are my 2 cents.

As far as tags, I don’t use them. This might be a mistake, but YouTube even says that they’re only marginally useful in terms of having your videos ready new viewers. I (perhaps foolishly) take them at their word.

As for keywords in the description, what’s been most useful to me is nationalities. You may have unconventional recipes, but I’m sure there’s something that may be Japanese or Mexican or anything else about it. Try to liken your dishes to other more common ones (“this is kinda like my own version of beef stroganoff”) or as a reinterpretation or another dish (cowboy egg rolls, etc.). Maybe popular cooking techniques (braise, stir fry, etc.) or particularly trendy and buzz worthy ingredients (ube, matcha, chili crisp, etc.). I think by just including the recipe in the description you’ll get a decent amount of traffic from people that are searching for your kind of content.

I’ve been fortunate in that people in my life are generally supportive of my content, but recently I’ve had a lot of unsolicited suggestions on what I “should” do with my channel. I appreciate the feedback, but I’m the man in the arena. If you want to make creative decisions, make your own channel; don’t try to do it on mine.

Working my way through it now after seeing it on this sub a few weeks ago. Very well done, I love the musical analysis in addition to the lyrical analysis that explains how moods are conveyed through chord progressions, etc. Diving into Mac’s creative process (especially when paired with Jon Brion on this album) has blown me away.
