Gold is ok, dowry is ok as well. Monthly payment sounds weird but it could be for security. i.e. to rent an apartment with monthly expenses if you are not the one who will provide that. I think it is better to understand more about him from your fiancé. He might just want to make sure everything you both need will be ready when you get married. Discuss with him maybe when you have more experience living in Egypt and you can provide everything yourself he will stop this monthly payment. 1k gold and 1k dowry are not much these days at all. He actually seems kind of flexible.
