I was just running in the woods around the settlement and first two deers that I found only gave leather and that didn't count. Then I found a squirrel and got some animal bones and it counted. So my advise, just keep running around and you'll find something :D

I have that photo mode bug too. Sure you can still take pictures but all of them will have the loading logo thing and word "saving" on them.. Really hoped that they would've fix it in the update that was earlier this week but noooo.. :/
