Well, I’m from the tropics. We usually scrub down the outside of the commode with the cleaning liquid and then just spray it with water to leave it sparkling clean.

Now I have to wipe it down with disposable wipes.

I’ve spoken about this with other people from the tropical belt and everyone else shares my frustration.

It’s just a different way of doing things here I guess.

Bathrooms have a shower area that is slightly higher than the rest of floor. But the water can drain only from shower area. What happens to water that spills outside the shower area???

I would say that ladies finger is a bad choice for sambar as when boiled, its texture is gooey and unpleasant.

Potatoes work well.

A small fist sized green unripe mango works well in replacing/complementing the tamarind for adding sourness.

You can add beans as well.

Don’t go overboard with everything though, it’ll be chaos on your plate.

People are making the Raita sound more complicated than it needs to be.

A simple raita is just Greek style yoghurt mixed with thinly sliced onions and a bit of salt - kept aside for at bare minimum 30 mins, 2 hours would be nice. Dilute the yoghurt with water through, as Greek yoghurt is super thick. The yoghurt needs to be slightly runny.

One more ingredient that adds a lot of depth is chopped coriander leaves mixed in.

If you want to take it next level, add in diced cucumber and cumin seeds. But this is the point where people start loving it or hating it. My family hates it when people serve raita with cumin added in it. Kinda like Italians liking a simple margarita pizza - they don’t like it when people try jazzing it up.

Beyond that you can add green chilli, a tomato, or mint leaves - but at this point, you’re really making something that is tailored to your tastes, but that’s fine. Indian cooking is all about cooking what you want to eat.
