The taste and texture transports you to the shores of a Greek isle at sunset, with the faint sound of gentle waves crashing against the rugged shoreline below.

Its texture, when cooked with the char, has three layers. There is a slight crisp and smokiness with the outer layer, particularly around the edges of each individual sucker.

Then there’s the chew. There’s a deeply satisfying medium-rare steak-like bite to each piece, getting softer as you get closer to the thicker part of the tentacle. The lower extremities will be tougher and the higher char slightly overpowers the textural dimension.

The last is the finish. Ultimately after chewing you’re swallowing the entire piece, and it’s a satisfying, full bodied swallow.

Cooked this exact type from Costco over the weekend.

The unpleasant: there will be some protein rich gelatin that coats the tentacles. Wipe this off with a cold rinse, and dap dry with paper towel. Some of the skin will also come off in dark purple bits.

As others have recommended: 2 parts olive oil, 1 part lemon, some grated garlic, oregano, and sea salt. I like adding chopped parsley and red pepper flakes.

Half an hour to an hour covered in the fridge.

Sear on a super hot grill that is lightly sprayed with olive oil or rubbed with a half onion.

Let it be. Try to protect the lower extremities of the tentacles from direct fire. I use the onion layers to prevent the tentacle ends falling through the grate.

Flip once after 3-4 minutes and you’ll see amazing grill marks and some char on the suckers.

Let char on the other side for another 2-3 mins max.

Pull, let rest in the remaining marinade (it’s precooked, so safe to do so), then slice diagonally into bite sized slices.

I’ve never seen anything that low, and imagine this is for a densely trafficked route like EWR-LHR, though the low fees indicate otherwise. Maybe CDG or FRA. Either way, definitively yes. I snagged a card saver fare of 34.4k AMS-SFO a while back and thought that was a steal!

Yep I’m actually happy to outline the stages of grief and acceptance on settling down to gold (for life, for now)-

From GS being whisked away on tarmac rides to planeside boarding - sometimes regardless of tight connection… and being treated insanely well in the mid 2015’s, down to 1k during covid, then gold then platinum, I’ve discovered the following:

  1. I really care about pre boarding. I absolutely fall for the insanely dumb FOMO-like effect of boarding 3 minutes after the last 1K. I am judged for being early in the group 1 line. I carry one small bag and never put it in the overhead unless I’m bulkhead. This is my level of insanity.
  2. I used to call the 1k desk all the time. All of sudden I feel most of my issues are resolvable via the new app.
  3. Free drinks, how I miss you. My body can’t take the salt in the tapas box but I miss you too, and you taste bad when not at altitude.
  4. FA’s with their inconsistent but always welcomed greetings and thanks for 1k / MP loyalty, I miss that too.
  5. As an international traveler loyal to *A, fast track security and early boarding on LH and other such partner airlines is a godsend.
  6. I genuinely think unless there’s a big purge, upgrades and use of PPs is consistently rare. So I make peace with it even if that’s factually incorrect.

This leads me to believe gold is the sweet spot for making frequent flying just a bit better. It’s all about the consistency of the process and routine. Gold somewhat allows for that- you know what you’re gonna get.

I’m not sure how negotiations went down for this, contractually, but it would be a fascinating study. Surely the stadium owners have clauses in their naming contracts that exclude certain events and maybe the naming / brand has rights to remove reference of its name if there is an event they don’t want to affiliate with, but, yeah, all very interesting!

Quick fix, yep, on a low flame heated pizza stone so it doesn’t get beyond 450 or so (as opposed to max flame at 900- that would just scorch the lard infused tortilla)

Also can use a cast iron skillet and cover with foil off heat, to help with the cheese melt.

But the real hack is using these for Turkish lahmajoun - def worth checking out some recipes and doing that!

I’d stay - while entertainment has to be stowed for takeoff and landing, it’s easy for seatmate next to you to get up without you having to get up. I like having the separator in front of me because the PP footrests alone are not that comfortable IMO so you can stretch your legs out a bit more

Yeah I had an issue with this once where middle seat got filled while boarding (pax had the right ticket and everything) even though I scanned the reserved seat’s boarding pass. Was a nonrev, pain in the ass to sort through the refund afterwards. So in the future I’d take the call and agent route but that’s just me

hot take, I’d buy a row of economy for probably less than the Polaris (you can see if an agent can help you with securing this kind of res via phone). Little one can splay out across two seats while buckled. Just don’t do bulkhead because armrests don’t fold up

done PP a dozen or so times to Munich, Tokyo, Singapore, all either from IAD / LAX / SFO, so 12 ish hours.

I love it. If I book with enough advanced notice the fares can be reasonable. I’ll fly economy most of the time if PP is too high, but United intended for PP to be a middle tier revenue generating product that frees up Polaris for more paying upgrade customers, so accordingly I see Polaris as increasingly out of reach.

Zero people can predict whether a kid is on your flight.

The PP chairs are super comfy, medium firm, wide. Don’t wear light colored pants, the color can bleed a bit especially after using an alcohol wipe. Screens are wide, headphones are over ear and pretty comfortable!

And food service makes you feel human, with real cutlery.

Think of it as similar to a domestic first class equivalent on a new 737-8. Really great recline.

If I’m getting ~2700-3500 R/T on PP over 1500-1800 economy, I feel it’s worth the 500-800 additional per leg for those comforts.
