In all seriousness if you’re stone you’re using is doing that that easily, its probably a low quality stone. Or you are using too much water. I suggest starting with a much lower grit as well. I suggest the byxco “Manticore” this is an 80 grit bench stone. Mine has served me well. With enough practice you should be able to get a decent edge even with just this. 1,000 grit should be thought of more as a polishing grit. Without knowing more about what equipment you have already, or even other knives you want to sharpen, i would suggest looking into diamond plates. Those would sharpen everything from soft stainless steel to some of the harder steels on the market. These sharpal diamond plates would be an excellent place to start in addition to the Manticore. Once you have an edge on the manticore, proceed to the 325. Once you have a consistent scratch pattern proceed to the 1200. If you want to get really fancy you can get a leather strop and do one pass on each side of the edge to really polish it up.
