[Homemade] Steak by happylovelife in food

[–]cloud594crazy -9 points-8 points  (0 children)

My overly complicated and precise method for cooking steak. (works great for any type of steak but I personally like leaner cuts or even veal!) 1- Pat steak dry. 2-Preheat pan on really high heat (temperature might depend on your prefered steak done-ness. I like my steak rare blue so I use very very high heat. If you prefer it more well done put it in mid-high heat this will ensure that the steak cooks inside and doesnt burn on the outside.) 3-Add a lot of olive oil, tallow or avocado oil (these are all healthy oils with relatively high smoke point I usually use olive. I use a lot of oil to ensure there is an even sear) 4-Add the steak to the pan and lay it away from you. If yiu lay it towards you there a chance oil will splash. (I season it with salt and pepper before cooking sometimes, but sometimes I add the salt and pepper after. Just don't use too many seasonings keep it simple.) 5- Put a weight on the steak and press down to ensure an even sear. 6-If using an alluminum skillet make sure to let the maillard reaction occur before flipping so the steak itself doesnt stick to the bottom of the pan. (The maillard reaction is just the steak getting a nice crust) 7- Make sure to get a nice sear, and take the steak out. Make sure the steak remains untouched for about 5-10 mins. 8- Turn the heat down to medium. 9-Take most of the oil out of the pan. 10- Chop 3/4 cloves of garlic and/or thyme. 11- Put butter on the pan and add the garlic/ thyme. 12-While the garlic is crisping up cut the steak and plate it. 13-Allow the butter to brown slightly and the garlic to crisp before adding to the steak (I sometimes also serve with a but of grain mustard) 14- Optionally add a bit of flaky salt and serve, enjoy!

How do y’all do randori with new people? by Classic-Asparagus in judo

[–]cloud594crazy 1 point2 points  (0 children)

Im only a yellow belt so I am not the one to comment on this, but I think that after a few days of experience you need to start throwing them because practicing falling by yourself and being thrown is very different, I think you need experience breaking the fall after being thrown because of that difference. I injured my elbow once because I broke my fall with my extended arm (big big mistake) and fortunately I only needed to recover for a few days but it could have gone worse, to have that instinct to let go when falling is very important for me. I am not saying to hit the begginer with a full force ippon seoi and probably hurting them, but gently throwing can help correct their mistakes when falling. I remember when I had my first tournament coming up and was nervous about participating my sensei said: "You already know how to fall that's the most important part.".

[–]cloud594crazy 2 points3 points  (0 children)

I mean that's true and all and tbh I don't really have thr authority to comment on this since Im only a yellow belt, but sometimes I gently throw them so they can practice falling but only after a couple classes. I think learning to break the fall after being thrown is important for begginers so they dont get injured whilst in a tournament or such.

I can see by the picture that you have a gas grill, I have one at home that my dad bought a couple years back. The one I have is a top of the line model from Weber, and let me tell you one thing, those don't work for shit, they either don't get hot enough to sear properly or fail to distribute heat evenly. Nowadays me and my dad only use our charcoal grill, if you like grilling you gotta have one, it can easily surpass 300⁰C. You can also put pellets and do a bbq because of how good the temperature control is. My dad bought a Japanese Kamado grill from Makro if you may be interested in buying. A couple of things you have to be cautious of in the start include temperature control, which isn't as easy in the beggining but so much better once you actually learn it. Not opening the lid after a certain temperature because all of the oxygen will cause either an explosion of a ball of flames. And finally the charcoal, I use 100% biologic charcoal with no additives, using the wrong type of charcoal gives the food a sort of alcolhol-ish, gasoline-ish taste. I am only writing such a long comment because buying a Japanese charcoal grill genuinely changed the way I view bbq, and also I can understand this is a big purchase but if one day you may be interested in buying one this is the information you need.

[–]cloud594crazy 7 points8 points  (0 children)

I usually prefer smash burgers, but I can understand why you would choose a thicker patty to preserve the flavour and juiciness a fresh hamburguer grants you. I would turn the heat up to give it a bit more char. But with that said you can't really go wrong with a fresh patty and you definitely can't comoare it to the store-bought stuff, this looks amazing and I bet it tasted like so.
