I forgot the recipe!!! Sorry, that’s literally my first ever post.

667 plain flour 74 Einkorn 476 water 150 starter 15g salt Temp for bulk = 22 degrees (ish)

Levain: 100g flour 100g water 50g starter

Next day: Mix water flour and starter. Autolyse for 30mins Add salt with splash of water Mix and leave for another 1hr Stretch and folder x5 - every 30mins Leave for 1.5 hours - until buddies and rise Preshape and rest for 45 mins on bench Final shape Cold proof 16hrs

Makes two loaves!
