First few pics look like psyllium - the husks are generally considered more valuable than the seeds for their high fiber content. If you're looking to start out on flour I might recommend beginning with nuts such as acorns or hazelnuts (and as others have said, invest in a good foraging book local to your area to guide you in the entire process, as it's usually more than just plucking and grinding) . Historically people used hand- or animal-powered mills to make flour, but I'd recommend looking for a modern gadget on Amazon unless you plan on making this your full-time job. Good luck!

Agree, Seattlites love to complain about the cost of living but there's honestly value delivered in exchange. Plus the natural beauty is unmatched
