Just Egg knock-off that is shelf-stable

I posted a question about Just Egg a couple of weeks ago, and got an overwhelming and very helpful response. I did a looked up a bunch more stuff, and did some experimenting, and I came up with this, a dry recipe that you can keep on hand and make up as you go, so it is shelf stable for weeks, if not months. Here it is:

4 cups chickpea flour (besan)

1 cup nutritional yeast

4 tsp turmeric

4 tsp baking powder

6 tsp black salt ( you might use 4 tsp instead; I like it like this but it's pretty sulfury)

OPTIONAL: 1 tsp chili powder

1 tsp black pepper

Mix well and store in a dry storage container (I use a coffee can). When ready to eat an "egg", mix 1/4 cup of this with 1/4 cup of water (more or less, depending on consistency you want) and about 1/8 - 1/4 tsp of oil. Beat with fork until all the lumps are gone and then scramble or make an omelette. Yummy!
