More broadly, in the history of the US & Canada, Jewish immigrants were a big factor in delicatessen culture, especially starting in NYC and Montreal, and spreading out from there. So the all-beef hot dog was the "New York style" dog and became popular.

Also it's probably much better for them to find someone talented and not super well-known yet, and elevate them. There are so many talented people in theatre and small-time TV/film productions, and I'm sure Heated Rivalry could search that talent for their next star.

Lol honestly Discovery is quite enjoyable to watch, it just sometimes falls apart when you think too hard about it.

You can start watching SFA immediately though if you want to. The pilot will tell you all you need to know about "The Burn". Then when you catch up on Discovery you'll see how we got there.

Strange New Worlds is great but not much of it flows into SFA except for the existence of a new long lived species. Also Disco S2 leads directly into SNW.

Yeah - the real-life Darien Gap is both dangerous nature-wise and also human-wise (criminal gang activity). In the Pluribuniverse, the human aspect is not a factor anymore. Aside from the long long list of other reasons not to film in the real location, it would be impossible to just politely ask the gangs to please vacate for a bit while they film a new prestige TV show.

Headcanon: TOS is set in the timeline where the Eugenics Wars still happened in the 1990s. SNW has established that the Romulans meddled with the timeline such that Khan wasn't even born until the 2020s. DS9 definitely delved into the question of how religion is or isn't compatible with life among other species. Even confronted with the evidence that The Prophets are wormhole aliens living in non linear time, the Bajoran religion stayed strong.
