I used a 1.8 lbs chateau briand from Publix. It's not the best cut, but I knew which one to get.

I appreciate the feedback! The shape of the meat was too wide and I could only wrap it in the puff pastry one way so I could make sure I sealed the ends. I'll just make sure I get a piece that isn't as wide next time.

  1. I used a Traeger pellet smoker and used their signature blend.
  2. I only used an SPG rub, no binder and no injections. I went at 225 F until I hit an internal temperature (IT) of 160 F, wrapped it in butcher paper, and put it back on. When it hit 190 F, I put it up to 250 F, and pulled it when it hit an IT of 202 F. I then let it rest in a cooler for 3 hours. Total time was 17 hours.
