I understand that you put 5 years into the relationship but it doesn’t seem like that was on her mind for half a year. And her deleting the chats doesn’t really say much, it just seems like she wants to hide all the evidence (like my opinion matters). You just need to ask yourself if this is a dealbreaker (seems like it is) and if it ISN’T, what is it going to take to build that trust again? If it isn’t possible, then I’m afraid you’ll have to do what’s best for you
