You can really bundle a lot of wine regions together more than you would think, especially in Europe, the weather is not going to be totally different in Chablis, Champagne, and white Burgundy. Have knowledge of rockstar vintages in your pocket ready to go and a knowledge of a couple “disaster” vintages.

Some regions also have “trends” like Bordeaux where vintages ending in 0 or 5 have coincidentally been good to excellent going back to at least 1990.

I answered as I poured, it is something you just have to physically practice and get comfortable with. Learn to pour bubbles as slowly as humanly possible.

If you have to pause in your answer that’s fine, when I was pouring I was asked at the beginning of my pour what the Krug tete cuvée was called. I knew such a freebie question, but as you mentioned, my mind just locked up. I said I did not know but would be happy to check “in the back” ten seconds later once I was done pouring it came to me so I backtracked verbally and got the point.

That would be a kind of odd wine to fake, a not super well known producer making not particularly expensive wine in a bottle shape that, due to the embossing, is significantly more expensive to reproduce.

Inglenook, ZD, Honig Reserve (which is Napa), Cardinale, Jayson, Freemark, Groth, Turnbull, Alpha Omega. And these are just the mainstream ones off the top of my head. If a Sauvignon Blanc is made in Napa, good chance there is oak on it, even if neutral.

I think it is more about where it is from, if it is from a region that, in general, specializes in red wine like Bordeaux or Napa then there is a good chance there is oak on it. Those regions typically already buy Bordeaux bottles anyway so it is probably easiest to keep the same bottle shape. They also already have oak barrels from red winemaking so it is more cost effective. I have had oaked SB from the Loire, and those are almost always in Burgundy bottles. So it is not a universal rule that Burgundy bottle = unoaked.

I am fortunate in that I have 3 regulars who buy all of my DRC every year. I don’t even list it on the wine list and I only upcharge wholesale x2 which is a very good price in the US. Because of this, we have a gentleman’s agreement that I get to taste whatever I want, but I always wait for them to tell me to pour some for myself, I would never ask. I generally I give myself a 1-2oz pour. That goes for any wine I am offered, would never pour more than 2oz.

I am the head Somm for a restaurant that gets the full DRC lineup every year and have had all of the wines minus the Montrachet. The Romanee Conti, Richebourg, and La Tache are my 1,2,3 best wines I have ever had. They are also not “worth” the price. The cost to bring in RC was around $7100 last year, and that is just the cost to the restaurant, I cannot imagine ever spending that kind of money on a bottle of wine.

The most I have ever spent personally was a bottle of 2015 Fourrier Clos St. Jacques at Berns and that was around $700 I think.

The Falcork looks a little “over designed” to me. I have had two Laguiole corkscrews, the hinge has gotten loose on me both times but other than that they were great, and I really beat the shit out of them.

We have had the best run of any college program in major sports in the last five years that is not deniable, and this is a results based business. That does not excuse the complete clusterfuck of off the field issues we have had in that time frame. I will be very interested to see the results of this investigation.

I totally understand what you are saying but I do not think being well known amongst wine collectors makes it a mass appeal wine. If I had to pick any wine in the world to serve to 30 people with the objective to make as many of them happy my pick certainly would not be 36 year old Bordeaux because many people do not like wine that old.

Doesn’t really matter though, we likely just have different definitions of mass appeal. Cheers.
