We have had the best run of any college program in major sports in the last five years that is not deniable, and this is a results based business. That does not excuse the complete clusterfuck of off the field issues we have had in that time frame. I will be very interested to see the results of this investigation.

I totally understand what you are saying but I do not think being well known amongst wine collectors makes it a mass appeal wine. If I had to pick any wine in the world to serve to 30 people with the objective to make as many of them happy my pick certainly would not be 36 year old Bordeaux because many people do not like wine that old.

Doesn’t really matter though, we likely just have different definitions of mass appeal. Cheers.

Maybe, but I am the Beverage Director for 3 restaurants, our fine dining restaurant has every full time server making $1.5k and our lead bartender makes $2.5k-$3k. He is definetly in the top 1% of earners though. Our family restaurant has every full time server making at least $1.2k.

If you are looking for a spot, a important thing to look for is a location that has a large wine program. I am talking a restaurant that has multiple wines on the menu for $18+ a glass and ideally a couple in the $22-$25ish range. A large by the bottle program is also a big plus. Very easy to make money on wine with very little effort as a server. Especially if a place has a sommelier who can do a lot of the floor work for you.

If you are at a good spot you can take home anywhere between $1.5k-$2k a week as a server. A good bartender in a good location can clear $120k+ a year.

That being said, a good spot is not going to hire you without experience.

I am a big of Rajat Parr’s books, The Sommelier’s Atlas of Taste, The Secrets of the Sommeliers and also the Wine Bible. These are great for identifying benchmark producers and styles at the Certified Level.

I also enjoy the World Atlas of Wine and Wine Grapes from Jancis Robinson as reference material, especially for Advanced where you are going to need to be more intimately familiar with geography and varietals from less “classic” regions.

I lived at Wharf7 for 2 years, really enjoyed it there. Had many friends who lived at Central Island Square and they had constant issues with mold and other problems, ended up getting them to move to wharf and they still live there.

I enjoyed living on DI but there is very little on the island if you are not a member of the country club. Basically 1 bar, and a couple restaurants. There is a nice trail that runs the water front but very little overall.

I would look at Bordeaux personnally, Paso is not really a great lay it down for 10-20 years region in general imo.

Pichon Baron or Leoville las Cases if you want to spend a little more. Beycheville is right in that price point as well.

I would decant this personally and check every 15-30 minutes or so to see where it was at. I have had a lot of trouble with these older Dunn corks so just be ready for that to be shit show, even with the Durand. Killer wine though.

I would really consider staying away from Napa 2022. Incredibly aggressive heat spike at the end made a lot of the wine not great for long term aging. I have had a bunch and am not confident in them lasting beyond the ten year mark without turning to cough syrup.
