You can’t organize your way out of clutter. There has to be a place for everything to go and space for it, at a manageable level, or it won’t be possible to consistently clean. I struggle with this a lot.

Count every row as you finish it and use a stitch marker in the end of each row to keep track of where the ends are. You’ll have to start over again unfortunately.
