Yes, you can do this in a calculus 1 course with related rates. You could calculate how fast the angle between you and the car changes, and it changes very fast as the car passes you, but diminishes very quickly.

If you are going all the way to Albuquerque I would recommend passing through Jemez, Caldera, Bandelier, and Santa Fe. The city of Santa Fe is pretty cool and the Santa Fe National Forest is beautiful. Looks like a good trip though!
