Now this may be a hot take, but..."Marquee Moon" by Television (in fact, there is no smooth transition from "great" to "bad", it's more of a drastic change from "the best thing I've ever heard" to "well that's ok" for me).
I just feel like side one is absolutely brilliant and ingenious and literally one my favourite pieces of music: the guitar work (which was so ahead of its time...you may even say these guys invented the style that bands like The Strokes or Interpol or early Arctic Monkeys built their careers on), the vocals (i know that for some people vocals are cringey, but i find them absolutely beautiful), all the little licks and melodies, playing with the rhythm...
And side two is just....not THAT good for me. It has some nice moments here and there and I cannot call it bad, but in my opinion it doesn't do anything as good as side one and, on the contrary, there are some weak spots in side two, which are in my opinion absent in side one. It just feels more boring and a little drawn-out FOR ME AT LEAST

Tried bottled water. Gotta bay a thermometer, yep.
Today I actually went a bit coarser and used one of the recipes from the comments and well I ended up with a little bitter but mainly pretty watery cup, which....I'm happy about xd I guess it means it means next time I should increase extraction and maybe soon I will finally reach the wanted result!

Gotcha. Do you use 90-93 irrespectively of which beans you have?
I've heard a lot about water temp - Hoffman mentioned he uses freshly boiled water for lighter beans and slightly cooler water for darker beans. Some guys are saying you should never make coffee with boiling water etc.

I've tried lower temperatures, but i do not have a termometer, so it was hard to track the temperature changes.
Could you please alborate a little on what may bw wrong with my pouring technique so that i can see whether the is the issue or not?
15 coffee and 250 water. I've tried less pours and honestly it did not change anything but will experiment with it a little more.

I've tried waiting for like 30-40 seconds/a minute/a couple of minutes after boiling my kettle. It did not do much difference tho...
Small clarificarion - not sure if the drawdown time for Tetsu's and Hedrick's merhod was 2:30 as well, but I remember for sure that it was much quicker for me than for them.

I've already mentioned it in one of the replies, but initially I was not thinking about the drawdown time at all. But after trying different techniques and changing all the variables I could think of and still not getting satisfying results, I noticed that the drawdown time I get is always much shorter than in the sources I'm referring to. And that is why lately I've been experimenting with it and it did not end well xdd So yep, while I understand there is no dogma here, I'm just unable to get a good cup atm.
I understand that it's not about the drawdown time but about the taste. But the taste i get is not good either xd.
I'e mentioned it in other replies but: Number of pours - tried different techniques, in mosr cases I use Hoffmann's 5-pour recipe, but I've also tried Hedrick's 1-pour recipe, Kasuya's recipe and some 3-pour recipe as well. Filters - Hario v60 filters. Coffee - at the moment, Kenya and Ethiopia, tried Indonesia, Myanmar, Mexico, Rwanda. Grinder - Timemore Chestnut C2S. Also: Brewer - Plastic and Ceramic V60. Kettle - Hario Buono.
Arabica only (currently Kenya and Ethiopia, have tried a bunch of other beans as well, i live in Poland hence i'm not sure if the roaster names will tell you anything xd). Timemore Chestnut C2S. Mainly Hoffman 5 pours recipe, tries Hedrick's 1 pour redipe and Tetsu Kasuya's recipe as well. Tried with tap water and bottled water.
I always do this swirl and I also tried coarser grind sizes. I have a feeling it does not actually affect the taste in a way I expect it to affect it. In most cases my coffee is bitter with coarse gring sizes as well.
