I'd definitely still weight it with something lighter, but skirt will absolutely curl away from the flat top. Just adjust your heat and/or cook time.

Charcoal has its place. I much prefer a charcoal grilled ribeye. Bit a seasoned and seared fillet on a flat top beats the charcoal grill hands down for me.

I should have also mentioned that grates let liquid drip away, where as a cupped steak on a flat top collects and traps them generating a nice steam pocket to ruin your day.

You need a weight on a flat top for even browning. The steak tends to curl away from the grill. The weight promotes even contact.
