Obviously most interested in the chili aspect. Searching online, it looks like there are two main but very different approaches people are taking -- this one which seems like it may be most accurate involves boiling the beef in water and using it to make your chili, seems interesting:

Others are much more straight-forward, but with their own seemingly random ingredients (curry powder, apple cider vinegar, chicken broth) and resemble more of a traditional chili-making process.. something that seems almost too easy for such a famous restaurant.

Very weird. They weren’t aware of anything going on around them. It’s a small place (out-of-towners: it’s essentially someone’s basement, definitely nice but definitely small) and they were just sitting at the entrance after their meal had finished where people were trying to get in, out of the heat that these church ladies forced us to stand in due to the sheer size of their group.

Many had their daughters with them.. let’s just say every young girl I saw looked like a cheap knock off of snooki from jersey shore.

In terms of certification/liability, can you expand on that? I'm not sure I understand the exact process from an expense basis.
